      wouldn’t she rather marry someone who she likes..

      I like idea. It reminds me of My best friend wedding and The wedding planner.
      Rom-com are predictable, but still people watch them. With some good romantic scenes and witty dialog, you might be onto a winner. Specially as the targeted audience is older than most romantic film. The couple must be in their 40’s and demographically that may be a smart move.

      When ?a past flame organises her wedding in his hotel, a broke Greek waiter realises he still loves her and sets out to woo her back.

      sorry for misunderstanding your logline

      now that I realize it’s from the perspective of “girl as protagonist” I must say I like this logline and suggest a simple spinoff to bring her forward in action:

      logline: When she discovers that her “holiday romance from 20 years ago” is now a “broke greek waiter”, helping to organize her marriage to “one of the most wealthy and prominent men in the country” she must (do certain action) to (achieve certain dramatic need) or (risk certain stakes)
